Struble joins Coe most recently from Agnes Scott College, a Division III institution in Decatur, Georgia where he helped his team reach the conference playoffs in all three seasons. He brings eight years of college coaching experience including five years as an assistant coach at Sweet Briar College (2012-15) and Smith College (2015-17).

A graduate of Randolph College in Lynchburg, Virginia, Struble was a four-year varsity player for the Wildcats. He was a member of the first recruiting class for the men's team following the school's transition to a co-education format. Eric earned academic all-conference honors while playing at Randolph.
Following graduation, Struble spent four seasons as an assistant girl's soccer coach while also acting as an assistant coach at Sweet Briar College. While at Sweet Briar, Eric helped the women's soccer team to numerous records including program wins in a season, conference wins in a season, shutouts and win percentage. Along with the record-breaking performances, Struble also assisted with recruiting, NCAA compliance and general team organization. Following the 2014 season, Eric was named the interim head coach at Sweet Briar, a position he held for one season before moving on to Smith College.
While at Smith, Struble served as an assistant coach, helping coach and develop two all-conference selections and the conference's leading point scorer during three seasons of experience. Eric earned his first collegiate head coaching position at Agnes Scott College in 2017 when he took over the women's soccer program. In his three seasons in charge, he coached multiple players who received recognition from the conference while having his teams earn academic recognitions from the United Soccer Coaches.
